It is a delicious cake fro Salento aerea made of puff pastry with a filling of cream and oven baked.
Ingredients for 6 people:
- 500g. Wheat flour
- 250g. butter
- 200g. sugar
- 3 yolks
Ingredients for the cream:
- ½ lt milk
- 3 eggs
- 125g. sugar
- 1 vanilla powder
Preparation for the pastry:
The “Pettole” are a traditional cake prepared during Christmas festivities.
Whisk together butter and flour, open it up in the middle and put the eggs yolks and sugar. Whisk all together very quickly, when the dough is ready cover it up in cling film and leave it to rest for a while.
Preparation for the cream:
In a pan, whisk eggs, sugar and vanilla powder. Add the flour and continue to whisk, add boiling milk on the mixture and whisk slowly on a low temperature on the cooker until it start boiling. Remove the pan from the cooker and leave to cool down.
Take small portions of dough in order to have a small disc shape, cover the inside of the mould, add the filling with cream and cover it up with another small disc of the same size. Close the edges and cook in the oven for 20 minutes at 180°. Repeat the same procedure according to the number of pasticiotti you would like to prepare.
