Purceddhuzzi

Ingredients for 4 people:

purceddhuzzi

  • 1 kg flour
  • 200 gr. Olive oil
  • 100 gr. Alcohol
  • 2 tablespoons sugar
  • Lemon peel and orange
  • A pinch of salt

For the stuffing

  • 1 kg. Honey
  • 1 tablespoon sugar
  • ground cinnamon, pine nuts

Preparation for the pastry:

Put the lemon peel in a pan with some oil. When it gets warm pour it on the flour and work the mixture with your hands. Add salt, sugar, alcohol, orange peel and lemon peel and juice from the orange. Work until you get a soft dough, cut sticks the size of a pencil. Cut pieces of dough about two inches small. Move the pieces of dough on a rough surface (grate or basket) sp that you will be able to creat small dumplings with small cavities. Fry them in plenty of olive oil.

Stuffing

In a saucepan put 3 tablespoons of honey and a teaspoon of sugar, let it melt over low heat. Pour a handful of purceddhuzzi and mix thoroughly with the honey. When the surface of each purceddhuzzo will be covered with a thin layer of honey, remove it and continue the operation until all purceddhuzzi will be covered with honey. Place on a plate and decorate with pine nuts and crashed cinnamon.
