lngredients for 4 people:

Laganari alle vongole veraci

  • 2 kg of poppy plants (soft and not yet blooming)
  • Oil
  • Garlic
  • Black Oives
  • Salt and pepper to taste

Method

Wash thoroughly the poppy plants and boil in salted water for 20-30 minutes. Add a pinch of baking soda to keep the green colour of the plant.

Once boiled, drain and let dry. Reduce the boiled plant to a pulp with the help of a ladle.

In a saucepan, heat the oil and add garlic. Then add the boiled poppy plants. Cook for 15 minutes. Continue to stir while cooking to make it more homogeneous. Add black olives, salt and pepper to taste.

Serve on slices of bread or Frise.
