Flower of Fennel

Ingredients for 4 people:
- 5 big fennels
- 400 gr. minced veal
- 2 eggs
- 100 gr. grated pecorino cheese
- 200 gr. Fontina cheese (slices of soft cheese)
- 1/2 glass Extra Virgin Olive Oil
- 1 onion
- Salt and pepper to taste
Method
Wash the fennels and boil them in salted water. Gently open 4 of them in the shape of flower and place them in a roasting pan. Chop the onion and fry it with some oil in a pan, add the veal with salt and pepper. Once cooked, turn off the gas, chop the fennel left, add eggs, grated pecorino cheese and Fontina cheese cut into small cubes and mix everything. Put the mixture in the middle of each flower-shaped fennel by using a spoon. Season with some oil; add some of the water where you have cooked the fennels.
Cook the flowers of fennels in the oven at the temperature of 180° for about 20 minutes. Serve hot with some mashed potatoes or mashed fennels.
