Fried Tomatoes

Ingredients for 4 people:
- Oil
- About 40 cherry tomatoes (10 each)
- An onion
- 1 bunch of basil
- A handful of capers
- Salt (to taste)
Method
Heat a bit of oil in a flat frying pan. Add the onion and let it cook for a little bit. When it is lightly browned, add the whole tomatoes, so that they all touch the bottom of the pan and oil. Cook for about 5-7 minutes, then add a handful of basil and capers, cover the pan with a lid and cook for another 20 minutes, add salt and leave cooking for another 2 minutes until the salt melts. Turn off the stove and pour into dishes and eat together with the bread. A tasty variation would be to eat as a condiment on a frisa.
Note: The cooking of tomatoes will be accompanied by a crackling, due to the cooking liquid which they then cause the explosion of the outer casing.
