Panzerotti (fried)

Ingredients:
- 500 gr. durum wheat flour
- 50g of yeast
- water
- Salt
- Olive oil
- Cappers or olives
- Plummed tomatoes
- Mozzarella
- 1 litre of frying oil
Method
Lay out the flour on the worktop, open up in the middle and put the yeast in small pieces, blend all together with a little bit of warm water and melted salt. Knead it to obtain together a compact and soft. Let it to rise for 1 hour and 30 minutes in a warm place. Cut the mozzarella in small cubes.
Stretch out the dough on the worktop covered by flour in order not to stick, cut it out in square or rectangular shapes. In the middle put the filling of mozzarella cubes and plummed tomatoes and cappers if you wish make sure that you do not over fill the centre.
Folder the dough sheet and close the edges properly with your fingers. Make sure the frying pan is very hot, and fry the panzerotti, turn them in the oil in order to have a golden colour.
Place them on a plate with a kitchen roll underneath to absorb the oil in excess. Enjoy them while they are still hot.
